The hand and the men’s experience applied to modern technology to obtain a top quality finished product. Harvesting time goes from the first days of October to the end of January and the milling time comes within twelve hours after picking with a continuous flow, integral cold pressing plant. Each varieties is milled separately from the others to maintain the typical aroma and flavour.
